Delicious tomato sauce with aubergines and salted ricotta. Ideal for seasoning pasta-based first courses.
Sauce with a typical Mediterranean flavour. The origin of the name "alla Norma" is disputed between two schools of thought: the first associates this term with the Sicilian playwright Nino Martoglio, who defined this dish as "È una Norma!" indicate goodness; the second associates it with the composer Vincenzo Bellini, since it was supposedly a dish dedicated to the celebrations of the opera of the same name. Only Italian tomatoes are used for the preparation.
The sauce can be poured directly onto freshly drained pasta. It is recommended to heat it at low temperature or in the microwave after removing the lid. It's also worth trying with bread.
